These Peanut Butter Chocolate Chip cookies are perfect for a peanut butter cookie craving! With only five ingredients and in 20 minutes, you could be devouring soft and chewy cookies that are gluten-free, grain-free, egg-free, Paleo and vegan!

Ingredients
  • 1 Tbsp ground flaxeed + ¼ cup water
  • 1 cup peanut butter creamy
  • ½ cup sucanat (or coconut sugar for Paleo version)
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix the ground flaxseed and water together. Set aside and let sit for about 5 minutes. While you wait, line your cookie sheets with parchment paper.
  3. Add the peanut butter, sugar and baking soda to the flax egg and mix together until smooth using a sturdy spoon. Fold in the chocolate chips.
  4. Use about 2 tablespoons of dough and roll into a ball. Place on the cookie sheet about two inches apart.
  5. Bake at 350 degrees for 8 minutes.
  6. Let the cookies cool a few minutes before devouring. Enjoy!
